Ingredients:

4 lbs russet potatoes, peeled and quartered
4 tbsp butter
1 cup milk
1 cup sour cream

1/2 cup diced cooked bacon
1/4 cup diced green onions

Instructions:

1. Preheat your oven to 350°F (180°C). Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

2. Drain the potatoes and return them to the pot. Add the butter, milk, and sour cream. Mash the potatoes with a potato masher or electric mixer until smooth and creamy.

3. Stir in the cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.

4. Transfer the mashed potato mixture to a 9x13 inch casserole dish. Smooth the top with a spatula.

5. Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden brown.
